Panettone

Panettone is an Italian sweet bread originally from Milano, my city. For us Panettone means Christmas. It is a typical dessert eaten during Christmas time.

 

The classic Panettone contains raisins and candied oranges. Artisan means high quality.

The quality of my Panettone starts with the research for the best ingredients: flour, butter, eggs, the candied oranges are home made, my starter is fed every day to be super active and to give to my Panettone its special taste and texture that you can’t find anywhere else.

 

And then there is the time and the love spent to make the Panettone.

The process takes between 48 and 60 hours depending on the time that takes for it to rise properly. 

 

Each Panettone is a piece of art baked with heart.

My Panettone’s recipe is by Master Rolando Morandin, adapted by Fables de Sucre Blog.

Keep your Panettone in a dry and cool place (54-65* F), away from direct sunlight. Once sliced, store the remaining in its cellophane bag sealed. If properly stored your Panettone will stay fresh and moist for about 4 weeks.

Mimosa Cake

A light sponge cake filled and covered with diplomatic cream and covered with cubes of sponge cake, it is a light delicious flavor that brings you right into the season of flowers.
It is usually made to celebrate women on March 8th

Zeppole

Similar to bignè, Zeppole di San Giuseppe are bigger, filled with lemony custard cream and topped with powdered sugar and a black cherry. Can be found fried or baked in the oven like mine. Usually they are made for San Giuseppe on March 19th

Pastiera Napoletana

Pastiera Napoletana is a much loved Italian dessert pie made with ricotta, grano cotto (cooked wheat)  and candied oranges which are home made. It’s from Napoli and usually is baked at Easter time.

Colomba 

Colomba (dove) is an other Easter time sweet bread. It’s made in a similar manner to Panettone with only candied oranges and decorated with almonds and sugar.

Veneziana 

Veneziana is a sweet bread from Lombardia. The big version is made on Christmas or Easter time, the small version is like a brioche covered with sugar.
